Meet Beth

After teaching Kindergarten for a couple of years, I realized my true passion was in food science, which led me to pursue a degree at Middle Tennessee State University (MTSU). Upon graduating, I gained diverse experience working as a contract dietitian in various hospitals and long-term care facilities before joining the VA at one of their outpatient clinics. At the VA, I specialized in weight loss, working with patients on weight loss medications and those considering bariatric surgery. I also created and facilitated nutrition education classes and spearheaded process improvement projects across the region.

These experiences paved the way for my current role as a bariatric/weight loss dietitian, where I assist patients in managing their nutrition throughout their weight loss journeys. In addition to direct patient care, I coordinate clinic programs, including developing social media content and patient resources, and driving projects to expand the clinic’s reach through telehealth services. I also support patients with billing and insurance navigation and mentor dietetic interns.

Fun Fact: After earning my first degree in education, I moved to Florida to complete the Disney College Program. I worked in the Epcot shops and later at Dinosaur in Animal Kingdom. I returned for a second stint before pursuing my second degree, this time working in Vacation Planning at Epcot.

Counseling Style

My counseling style blends both structure and compassion. Rather than focusing on restrictions, I emphasize what we can add to their routines—whether it’s new foods to include in their diet or additional movement and exercise to integrate into their day. I also encourage creative thinking, helping clients discover tools and strategies that support the creation of lasting, healthy habits.

Education & Experience

I am currently working towards my Board Certification in Obesity and Weight Management, a step that will further enhance my expertise in this area. Additionally, I completed a Yellow Belt certification in Lean/Six Sigma, which involved rigorous training and a project. I have also undergone Change Management Training and Crucial Conversations Training, both of which have equipped me with valuable skills in leadership and communication.

Research and Professional Projects

During my internship at UK Hospital, I conducted a research project focused on increasing on-time malnutrition screenings, and I had the opportunity to present this work at the KY Academy of Nutrition and Dietetics Annual Conference, though the research was not published. In college, I served as a research assistant to my professor, where I contributed to a nonclinical project with the goal of increasing fruit and vegetable consumption among the geriatric population.
